Well, it's been a busy two weeks but I think things went well. Confluence seemed well attended and enjoyed. Our little musical (20,000 Leagues of Music) performance on Saturday was enjoyed. And last Friday my work project entered the rollout phase which went very well and this week we've just been trying to tie up a few loose ends, etc. I'm tired, but it's a good kind of tired.

In other news, I subscribed to a CSA share (a mini-share meant for one person) from Edible Earth Farm and I've been enjoying the results and sharing them with my daughter and a friend who has rabbits. It's been a surprise every week to see what's in the bag. Over the past few weeks I've accumulated a lot of zucchini. Tonight it was actually cool enough for me to attempt to use some of it up by making Chocolate Zucchini Muffins. And that only used up part of a large zucchini that I had. I have several more to use up. I'll have to find more zucchini recipes to use it in. This week I also got an eggplant and the host of the CSA came out when I was picking my produce up and gave me hers as she and her family don't like eggplant. I love eggplant, especially grilled. I will be firing up the grill this weekend to grill some eggplant and zucchini. Another recipe I've enjoyed with the cucumbers from the CSA is my version of Tzatziki with non-fat Greek yogurt, lemon juice, garlic powder and Penzey's Fox Point seasoning. I make it before bed and let the flavors blend together overnight and eat it.

Also, I've been enjoying this little comedy, mystery, on-line video series called Ain't That Life. I think this is the way shows are going to go in the future. We need to support the good ones. Go take a look.

I've been doing my zukes primarily as stir fry and/or fried rice, basically trying to recreate what I see them do at teppanyaki joints. I still need to research to find a recipe for the ginger sauce they usually give you for the shrimp and veggies, but I've been faking it by stirring ginger into teriyaki sauce.

I had one fairly large zuke that I shredded for this recipe and still had about half leftover plus I have 4 or 5 left now plus the one I cut up and ate raw. It's been kinda hot here and I don't have AC so I've been reluctant to heat anything until we had some rain yesterday and a break from the heat. Stir frying them (or sauteeing with onions and garlic) is one of my favorite things to do. Also, I swear I've seen a bottled version of one of the sauces/dressings at Whole Foods but it might be just the place that does sushi for them that has it.

Believe me, I totally get that; I am SO TIRED of 88 degrees and worse indoors!!! I basically wait until about dusk when the temps falls and the windows open again before I cook anything, and then shower fairly promptly afterwards. I can deal with stirfry, because once you've chopped everything up into little tiny bits, it only takes about five minutes to cook — especially since for the protein I'm using chicken breasts that I broiled en masse, wrapped individually, and threw in the freezer for just such occasions!

Ah! Preparing ahead, what a novel idea! Well, now that it's a bit cooler, I may attempt to do some cooking.
