Irish Soda Bread

A co-worker's mother at the place where I used to work would send in Irish soda bread with her son for us at work on St. Patrick's Day. Since I no longer work there and I found this mix in my local grocery store, I decided to make my own to take to work. I added raisins to the mix, too. I got to sample it after slicing and I think it tastes pretty much like the bread from my co-worker's mother.

Irish soda bread *SHOULD* have raisins (or currants) in it.

That's what I thought. I can understand not putting raisins in the dry mix to extend shelf life but the instructions seemed to indicate that raisins or currants were "optional".

Yummm....Good idea for St. Pat's Day - much, MUCH better than bringing in Irish Potatoes!
